Admittedly one online commenter called my pie revolting. But when I made my “honey pie” at a contest judged by Martha Stewart, she called it “fabulous, fabulous,” had another bite, and awarded me third prize. She even had me come on her show to make it live.
Maybe the commenter on her site was put off by my use of lard in the crust. Well, I regard Crisco as revolting. But no matter, you can make honey pie in any crust you like — or none at all.
The recipe for the filling is super simple. “Honey pie” — which I used to call my husband, back when he was just my boyfriend — stars just honey and eggs (which he raises) with butter and a little vanilla and nutmeg. In other words it’s always in season, and I bet you have all five ingredients in your kitchen right now. How to describe it? A little like a pecan pie without the pecans, but mostly honey pie just tastes like it sounds. Stir it up for your valentine, and share a little sweetness.
