Kojicon: Preserving the Past, Fermenting the Future

The Yellow Farmhouse Education Center, a nonprofit organization based on Stone Acres Farm in Stonington, CT is excited to announce their third annual, globally attended virtual conference, Kojicon 2023: Preserving the Past, Fermenting the Future, which takes place February 20 – March 5, 2023. Koji experts and food makers from across the globe will gather to virtually share their passion for mold-based fermentation during this two-week conference.

This year, the interactive programming will dig into how fermentation knowledge has transferred across generations, discuss the ways that koji connects people to their ancestors, and explore ideas for a better food future through fermentation.

Some of the Kojicon 2023 presenters include fermentation experts Sandor Katz, Jeremy Umansky and David Zilber, Korean fermenters Irene Yoo and Yong Ha Jeong, Takashi Soto of San-J, Taiwanese soy sauce maker Ozzy Hsieh, Chinese fermentation expert Mara Jane King, Ken Fornataro of Cultures Group, and Yuichiro Murai who is the 29th head of the family owned Kojiya Sanzaemon – a business that has been part of the Japanese koji culture for 600 years.

Tickets for Kojicon range from $30-$140

Kojicon is planned in partnership with and curated by Rich Shih, fermentation expert and co-author of “Koji Alchemy.”
