Just because the weather’s getting colder doesn’t mean you need to say goodbye to your CSA. From December to April, Winter Sun Farms, located in New Paltz, will offer the benefits of fall produce through a winter CSA program.
Winter Sun Farms purchases a portion of the fall harvest from sustainable farms in the Hudson Valley then freezes the produce through an Individually Quick Frozen process. Fruits and vegetables are stored then distributed at CSAs throughout the city during winter months.
The goal of Winter Sun Farms is to develop a system where the farmer has a guaranteed and fair market, and the consumer is able to eat fresh and local produce year-round. Each package is labeled with the name and location of the farm where it originated so that members truly know where their food is coming from.
Some of the produce that will be offered this winter includes broccoli, tomato puree, edamame, peppers, butternut squash, corn, collard greens, blueberries, raspberries, and fresh pea shoots.
