On the sixth day of Christmas my in-box gave to me—Edible origami in a pine tree. Evidently I’m not the only one who loves Edible too much to toss old issues into the recycling bin. The clever cooks over at the gorgeous Ger-Nis Culinary and Herb Studio bedecked their Christmas tree with a garland made from the pages of our magazine. School owner Nissa Pierson’s niece Kiana even created a crowning star—fashioned from old Edible covers—that made me as proud as our James Beard Award (well, almost). I’ve been meaning to enroll in one of the high-tech space’s locavore-minded classes—upcoming offerings include herbal desserts and how to use fresh horseradish—but now I’m hoping that next December, they’ll offer a tutorial in tree trimming.
