We really liked this piece on corn in the weekend’s Times from their Connecticut section — hey, it’s part of our foodshed, right? — in which farmers talk about the super-sweet hybrid varieties they’re growing now with help from the State, the dearth of yellow corn and the heirloom flint variety ground and sold as “Jonnycake meal” that some farmers have been growing for centuries.
It’s an in-depth look at the way one of the edible hallmarks of summer has changed with technology and our own tastes, as well as a love letter to a State we often overlook for it’s fine farms and farmers. Their motto, after all, is “he who transplanted still sustains!”
